There are a couple of ways to solve this (creating that brush)
I'll post a few screenshots on how to do it in a few minutes.

Let's say you want a donut circle with 14 sides.
First..we go and create a CYLINDER with 14 sides.
Height 4. Radius 2. Sides 14.
We use this CYLINDER as a reference for our sheet donut.
Create a SECOND CYLINDER, which has a smaller radius inside the other cylinder.
Height 4. Raduis 1. Sides 14.
Select BOTH CYLINDERS and press the key Q to FREEZE them. We do not want to work with them.
Now we want to create the actual Face (grating) brush.
Select "FACE" and change the [u]sides[u] to 16 (maximum)
this pic shows 2 white circles (CYLINDER brushes) and 1 blue circle (builder brush).
The 2 WHITE circles are ONLY dummies. You need them to create the face brush.
Start to move the vertecies around of that new face brush
Move them all to fit the shape of a half donut.
Then COPY the half donut to the other side (rotate it)
Close them together and maybe polish it. (snap vertecies to grid if you want)
Now you can press SHIFT+Q to unfreeze the 2 CYLINDERS and you can delete them.
if you have questions..just ask.
To SCALE the donut. (this example shows how to scale the INNER radius)
select all inner vertecies.
Hold the hotkey S
Use arrow keys (up/down) or mouse to scale it.
You might also use the stretching (key: D) but I think...it always messes up the donut.
