If you're creating a new brush for a tunnel make sure you have a few splits before you create the brush (the option to split the brush is right next to the brush sizing).
If you need to bend an existing brush, you'll need to split it also befroe you can do anything by using the "clip" tool located in the bottom-right of the brush operators area.
Once you have your splits done click the "bend" button in the brush operators area and specify a degree to bend (90 degrees being a full turn, 180 degrees being a complete turn around and 360 degrees being a full circle).

You can also select verticies in the Top view port and rotate them manually holding R and pressing the left or right arrow keys..

You mean, click? I dont think he wants a broken finger. I find that sometimes you can go in face mode and extrude faces, then go into vertex mode and select the vertices and press, I mean click the bend button . but you could always do it another way because there is alot of different ways to do stuff RED and the bend feature is one of them.
I also tried to bend things, for my wonder I noticed that pieces that have sections dividable by 11 will bend smoothly (ie 11,22,33,44) length does not seem to matter. This way I managed to create working 90 degree turns perfectly
